What am I going to do with Rib Bones, you ask? Are you in for a treat on a chilly weekend! First, these bones have more meat on them than you might think. Second, they come from Brookford Farm, and that means they're packed with the robust, meaty flavor of 100% grass-fed, pasture-raised beef.
So here's one thing you can do with them: Get a big, heavy-bottomed soup pot, heat it over medium high and sear the bones on all sides. Get a nice sear, don't worry about browned bits stuck to the bottom. Remove the bones; turn the heat down to medium. Add a diced carrot, celery, and onion; saute them until the vegetables begin to get a little brown but still retain some crunch, then add sliced mushrooms and saute for another minute or two. Put the bones back in the pot, just cover them with beef broth. Add salt and pepper to taste, and simmer on low until all the bones are clean, adding more liquid if needed. Remove the bones and you have a hearty, healthy soup that's sure to fill you up.
Please note: the bones have a very little meat on them and are best intended for soup broth.
