A steak so good we have to call it Sir! Brookford Farm's 100% grass-fed beef means that this cut is even better than what you'll find at the supermarket. Super lean, this is another cut that can benefit from marinating or pounding thin, when you want to cook it quickly on high heat. It's also good on the grill, but it's easy to overcook. Make sure your heat is high, sear for a few minutes on each side, then take it off the heat. Let it rest before cutting into it so you don't lose its juices.
