Hey! Don't click away just yet. I know you might be thinking about turning up your nose right now, but we promise: liver hasn't gotten a fair shake, and this liver from Brookford Farm deserves a second taste. 

Full of iron and protein, this beef liver comes from a sustainable family farm; it's pasture-raised and 100% grass-fed, resulting in a mouthwatering, robust flavor that you can't get at the supermarket. 

Don't go the traditional liver and onions route - change it up a little with just a few extra ingredients. Dredge the livers gently in flour seasoned with salt and pepper, then cook them in butter until each side is brown, but the meat is still rare in the center. Remove the livers to a warm plate, and saute slices of bacon or fatback in the pan, adding more butter if needed. Add 3 cloves of finely chopped garlic and saute until you can just begin to smell the garlic. Pour in enough red wine to just cover the bacon, and throw in a handful of croutons (the same ones you sprinkle on salad) and simmer for a few minutes. Return the liver to pan with your wine sauce, and cook until they are just heated through. Now, that's a reason to love liver!
